Wholemeal Pasta


Nothing beats a fresh egg pasta and it doesn't get much fresher than this! White pasta can for me be pretty impacting on my sugar levels so by making my own wholemeal pasta it helps to balance out those levels. Plus, it's a great workout if you don't have a pasta machine... I've done this recipe with just my rolling pin, some muscle and a little bit of patience. 😄 The flavour and texture of the wholemeal pasta I think adds a much better, more flavorous result to the dishes you pair it. You could also use this for lasagne sheets, simply cut into sheets rather than pasta strips!

Ingredients

  • 2 medium sized eggs
  • 150g wholemeal flour
  • Keep the flour on hand to dust the work surface when you're rolling out the pasta :-)

Special equipment needed:
​
  • Food processor
  • ​Rolling pin

How to

Prep:
  • Put the wholemeal flour into a food processor and crack 2 eggs in too
  • Process on high until it turns into little ball shapes like the picture
  • Take it out of the processor and combine it in your hands to one big piece of dough (it should be a little sticky)
  • Dust your work surface, your rolling pin and the top of your dough  with some extra flour
  • Roll your dough out with the rolling pin until it's about 1 cm thick
  • Fold it in half and roll again until it's 1 cm thick...
  • Fold in half, roll again until it's 1 cm thick and repeat 3 - 4 times, using flour where you need it if it's starting to stick to your surface or rolling pin
  • Now start rolling the dough to get it as thin and possible into a square like shape, as per the picture
  • Note: be patient and be prepared to have a mini workout doing this! Burning calories while you're making dinner!
  • Dust with lots of flour on both sides (being careful when you flip it)
  • Fold it up into a flat roll (as per the photo)
  • ​With a sharp knife, as per the photo, cut into strips, remembering it will expand once it's cooked so don't cut it too thick!
  • Once it is all cut, run your fingers through it gently so it loosely unfolds into long pasta strips
  • Leave it to sit for a couple of hours to dry 

Cooking the pasta:
  • Bring a large pot of water to boil with a tsp of salt
  • Place the pasta into the boiling water
  • Bring the water back to a boil
  • Cook for 5 - 7 minutes or until the pasta is cooked how you like it... Don't over cook it or it will taste rubbery!​​
