Vietnamese Steak Salad


Who knew salads could be this satisfying! Pairing juicy and succulent slices of steak with crunchy lettuce leaves and capsicum peices is a delicious combination. The steak adds warmth to the dish, meaning it you can enjoy this even if it isn't the Summer months, which is when most prefer eating salads! It is also a great way to practice your steak cooking skills without the stress of other elements to worry about. Once the steak is good to go, the salad comes together nice and easily!

Ingredients

Serves: 2
  • ​400g sirloin steak
  • A bag of your favourite mixed salad leaves
  • Small handful small mint leaves
  • 1 large red capsicum
  • 2 tomatoes
  • 1 avocado
  • 1 red onion
  • Dress with 1/2 cup of my Vietnamese sauce

How to

Let's get the steak done!
  • ​Make sure your steak is at room temperature
  • Heat a non-stick heavy based pan until extremely hot
  • Sprinkle a pinch of salt on one side of the steak
  • Place the salt side of the steak down in the pan (it should sizzle like crazy!)
  • Cook for approximately 2 minutes then salt the uncooked side and turn
  • Cook for a further 2 minutes
  • Take the steak out of the pan and let it rest for 3 - 4 minutes on a chopping board before cutting (this will cook it medium rare depending on the thickness and cut of beef)

Start the salad while the steak sits:
  • Slice the capsicum and red onion finely
  • Cut the tomato into wedges by cutting the tomatoes in half, then quarters, then halves again
  • ​Cut the avocado in half going around the stone on the inside
  • Twist the avocado apart and remove the stone from the half it is left in
  • Cut the halves into quarters length wise. This should then make it easier to peel off the the skin from the outside.
  • Slice up the avocado to approximately the same size pieces as the tomato

And now bring it altogether:
  • Wash the lettuce leaves and place onto a serving platter or into a serving bowl
  • Place the red onion, tomato, capsicum and avocado onto the bed of lettuce, arranged randomly or toss it through
  • ​Slice the steak thinly on an angle and then place on the salad and garnish with the mint leaves
  • Drizzle the Vietnamese sauce over the top and finish with a grind of salt over the steak
