Vietnamese Sauce

This is the kind of sauce I love to have in the fridge ready to go, because it can be used on so many different dishes. This is awesome on a salad, as a dipping sauce for spring rolls, paired with fish (try my Salmon Green Tea Noodles Recipe) and even yummy to throw a table spoon on your poached egg for breakfast - if you need a bit of spice to start the day! Basically, it's incredibly versatile. You can make it as hot as you like, depending on how much chilli you put in it. It's a one-jar-wonder sauce, making it ridiculously easy and simple to make for yourself!

Ingredients

  • 1/2 cup apple cider vinegar
  • 1/2 cup fish sauce
  • 1/2 cup stevia
  • 1 1/2 cups of fresh filtered water
  • 2 fresh chillis (use your desired heat, I use hot!)
  • Zest of 1 lemon
  • 1 Tbsp grated fresh ginger

How to

  • Sterilise a jar
  • Slice the chilli thinly (I leave the seeds in for extra heat)
  • Place all the ingredients in the jar
  • Put the lid on and shake until stevia has dissolved
  • Youre done!
  • Note: keep in the fridge and will last a good couple weeks
