Thai Dipping Sauce
This sauce packs a punch! It's strong, spicy, fresh and has a good zing to it, all in one mouthful. It's beautiful paired with a piece of medium-rare steak or as a dipping sauce for fresh rice-paper spring rolls or drizzled on your egg in the morning. Taking the garlic out of its skin can be super frustrating and time consuming because it's a fiddly job. But, to make it much easier, I grate the garlic still in its skin... You'll find the skin doesn't grate through and it will fall off to the sides.
