Fresh Tomato Dressing


This is a fantastic way to use your tomatoes when they're super ripe and on the verge of needing to be thrown out into the compost. This dressing is delicious with a pasta, on a summer salad or drizzled over your eggs in the morning. If you love the taste of tomatoes, this dressing delivers a genuine fresh tangy tomato taste that freshens up almost every dish. The only thing you need to be concerned about with this dressing, is being careful of your fingers when you're grating the tomatoes!

Ingredients

  • 2 ripe large tomatoes
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • ​Pinch salt and pepper

How to

  • Slice the tomatoes in half
  • Grate each half into a small mixing bowl (grate the cut side, so you should be left with the skin once grated)
  • Add the rest of the ingredients and mix with a fork
  • ​Use straight away
