Preserved Nectarines


I had a friend from work gift me a big box full of juicy nectarines! Even with me in the kitchen cooking up a storm, making sauces, desserts and delicious dishes, I still had a truck load left! By storing your fruit this way, you can keep them in the fridge for a fairly long time which makes them a great "go-to" when you're after something quick.

​Also, when you preserve your fruit with liquid sweetened with stevia, not sugar, they are certainly a bit easier on the sugar level; the actual fruit is sweet enough as it is! Preserved fruit is perfect paired with some yogurt for a small snack or even a dessert; as always though with fruit, remember portion size is key here! The whole jar isn't a snack!

Ingredients

  • 6 ripe nectarines
  • 1 Tbsp stevia
  • 2 cups water

How to

A bit of quick prep:
  • Sterilise a large glass jar (the easiest way is to place in boiling hot water for a couple of minutes)
  • Wash the fruit so it’s nice and clean

Let's get the fruit ready now:

  • De-stone the nectarines by running a knife from the top to the bottom and all the way around the stone on the inside
  • Twist the fruit holding each side and it should come apart with the stone on one side
  • Take out the stone and cut the halves into 4 equal-sized pieces
  • Pack the pieces tightly into the jar

And now the liquid:

  • In a saucepan bring the water to boiling
  • Add the stevia and stir until desolved
  • Pour the liquid into the jar, over the nectarines until the nectarines are covered
  • Place the lid on the jar and store in the fridge
  • Note: should last a month unopened and a week once opened
