Mushrooms on Toast


Waking up to the smell of sautéed mushrooms can put even the worst of sleepyheads in good spirits! Bite-sized button mushrooms not only look good and taste yummy, but they also cut down your preperation time as you don't need to slice them. I am also quite content eating the mushrooms on their own rather than always paired with bread.

​The bread in the below pictures is underneath the mushrooms, but if you like your toast to stay nice and crunchy, simply place it on the plate separately. Because mushrooms are low in carbohydrates, adding a piece of quality toast balances the meal nicely.

Ingredients

Serves: 2
  • 300g button mushrooms (of course other mushrooms are fine too!)
  • 2 thin slices of quality bread  
  • 3 cloves garlic
  • 1 Tbsp fresh thyme or 1/2 tbsp dried thyme 
  • 1 medium shallot
  • 2 Tbsp plain natural yogurt
  • 1 cup of water
  • 1 Tbsp oyster sauce 
  • Salt and pepper to taste

How to

  • Finely dice the onion and garlic 
  • In a small saucepan sauté the onion, garlic and mushrooms 
  • Add the thyme, oyster sauce and yogurt
  • Combine
  • Bring to a simmer, and let it bubble away for 10 minutes to reduce
  • Salt and pepper to taste 
  • ​Serve on a nice crispy piece of buttered rye or five grain wholemeal toast
