Mushroom & Miso Soup
with Spring Onion
This recipe is really versatile; a snack or a quick and easy lunch or dinner. I like to always have some sachets of miso in the food pantry as it's a really useful ingredient for a range of recipes! The miso in this soup adds beautiful depth to the taste and is a great source of iron, B6 and magnesium and it's truly so simple - literally just add water! Adding vegetables as well adds flavour, textures and more minerals and vitamins! Feel free to get creative and use what's in your vegetable draw; frozen peas is always a good idea too as another alternative!
