Mince Potato Topped Pie


Your taste buds will thank you for making this! This is such a moorish dish and great to feed the family, leaving everyone with a warm, full belly! What I love about making this, is that you use the one pan throughout the process - easy! The beef is a great source of protein, but be mindful that the potato adds carbohydrates so don't just tuck into the top of the pie! But you may have noticed that, contrary to the traditional pie, this has no pastry! WINNING! I love to add a beautiful leafy salad, balancing the pie with some crunchy lettuce leaves! Delicious.

Ingredients

Serves: 4
  • 500g beef mince
  • 1 onion
  • 6 medium potatoes
  • 4 cloves garlic
  • 2 Tbsp oyster sauce
  • 1/3 cup beef stock
  • 1 tsp pepper
  • 1/2 cup cheese (not processed cheese)
  • 1/2 cup milk
  • ​4 Tbsp olive oil
  • 1 tsp cornflour
  • 1 Tbsp cold water (+ how ever much water you need for your saucepan - this water though shouldn't be cold)

Specialised equipment needed: 
  • Oven-safe pan

How to

  • Turn oven to 200°C fan bake

Let's firstly get the potatoes going:
  • Peel and cut the potatoes into quarters
  • Place the potatoes into a large saucepan and add enough water to cover the potatoes
  • Bring the water to the boil
  • Once the water is boiling, simmer for 20 minutes until the potatoes are soft and coming apart when you put a fork in them

Start the filling while waiting for the potatoes:
  • Put a medium-sized oven-proof frying pan onto a medium heat element
  • Dice the onion and garlic then sauté in 2 Tbsp of olive oil
  • When the onions are turning transparent add the rosemary and sweet basil
  • Sauté for a minute then add the mince
  • Cook the mince until brown, about 5 - 10 minutes, making sure to turn and move the mince around occasionally 
  • Add the oyster sauce, pepper and beef stock and reduce for 10 minutes
  • Mix the cornflour with the cold water in a cup and add to the frying pan to thicken the sauce
  • Cook for another minute then turn off

Once your potatoes are done:
  • Drain the potatoes and let them sit for a few minutes to allow extra water to evaporate out of them
  • Add the milk, 2 tbsp olive oil and grate the 2 cloves of garlic in
  • Mash the potatoes until mashed well (you want a smooth texture so that it is easy to use when putting on top of the pie)
  • Add a couple pinches of salt and pepper

Now let's put it all together:
  • In the same pan that you cooked the mince in, keep the mince in the pan and flatten it out 
  • Gently spoon the potato on top
  • Smoothen the potato out with the back of a spoon
  • Place the cheese on top and add a couple grinds of black pepper
  • Cook in the oven for 20 - 30 minutes until the cheese is melted and the top is nice and browned
  • Take it out and let it sit for 10 minutes before devouring it 😬
