Lemongrass Chilli Dressing


The benefits of lemongrass are really extensive and impressive! And the flavour and scent that comes from the plant stick is beautiful. Just the aroma when you're making this dressing is reason enough to give it a go! And, after a couple of days in the fridge the lemongrass flavour will really start to come through... That’s if you can wait that long 😄 This tastes delicious paired with chicken or drizzled over freshly steam vegetables and a piece of white fish.

Ingredients

  • 1 stick fresh lemongrass
  • 2 chillies
  • 1/4 cup apple cider vinegar
  • 1/4 fish sauce
  • 1/4 cup stevia
  • 1/4 cup lime or lemon juice
  • 3/4 cup water
  • A handful of coriander

How to

  • Sterilise a medium-sized jar
  • Crush the lemongrass with the back of a knife to release the flavour
  • Cut the lemongrass into 2 - 3 peices to fit in the jar
  • Chop the coriander roughly and add to the jar with the lemongrass
  • Add the rest of the ingredients, put the lid on and shake until the stevia has desolved
  • ​​Keep in the fridge. It should last for up to 10 days - 2 weeks
