Leek, Potato & Pea Pie


This is my kind of pie! Homemade, healthy and incredibly delicious. It is also really straight forward to make, making it a great after work meal for the family. I know some people might be skeptical about a vegetarian pie... But let me assure you that the flavours that this pie packs will have you convinced! Meat free options are ideal because balance is key - also you'll likely save some money! All the flavour you need is in this pie. Spinach wraps are a great alternative to pastry and you can still get that satisfying crunch... And when the delicious cheese melts through - it is a seriously good time. 😍

Ingredients

Serves: 4 - 5
  • ​3 medium leeks (trimmed with a few centremetres off the dark green part)
  • 1 medium potato
  • 1 cup frozen peas
  • 3 cloves garlic
  • 4 spinach thin wraps (25 cm wide) 
  • 1 cup of lite cream 
  • ​3 Tbsp olive oil
  • 1 cup grated cheddar cheese 
  • 1 cup water 
  • ​Salt and pepper to taste (I use about a tsp of cracked black pepper)

Special equipment needed:
  • 25 cm or so pie dish

How to

  • Heat the oven to 200°C fan bake 
  • Clean leeks, peel the potato and garlic 
  • Crush and thinly chop the garlic 
  • ​Thinly slice the leeks and cut the potato into bite-sized cubes 
  • Heat a heavy based pot to a medium heat 
  • Add olive oil, garlic and leeks 
  • Sauté for 7 - 8 minutes, stirring from time to time so it doesn't stick 
  • Add the potato and sauté for another 7 - 8 minutes  
  • ​Add the cup of water and stir
  • Cover and cook on low for anther 7 - 8 minutes,  stirring occasionally
After 7 - 8 minutes:
  • Remove the lid and pour in the cream 
  • With the lid off bring to a medium heat and reduce the mixture, stirring  frequently so it doesn't stick 
  • Keep it simmering and reducing until it gets to a nice thick texture as in the picture 
  • ​Salt and pepper to taste 
  • ​Once it's at the thickness you like, turn it off and stir in the frozen peas (don't worry they will cook when in the oven) 

Now to get the pie dish ready!
  • Place 3 of the wraps in the pie dish so they cover up the sides of the dish and the bottom (they will be triple thickness on the bottom and this might require some practice and moving them around to get it right) 
  • Once you are happy with your layout in the dish sprinkle a thin layer of cheese between the layers on the bottom main sure you leave some cheese to sprinkle on the top - for example place the first wrap in the dish, then cheese, then the second wrap, then cheese and finally the third wrap 
  • Spoon the mixture into the dish on the wraps until the dish is full and spread it evenly (sometime there is a bit left over to eat)
  • Place the final wrap on top and use your fingers to seal up the side best you can 
  • Sprinkle the remaining cheese on top and place into the middle of the oven
  • Bake until it is golden brown on top 
  • ​You're done! Let it sit until it cools slightly, serve with a nice left green salad and enjoy 😊
