Lemon & Mint Ginger Ale


When the sun is shinning and the skies are blue, try this recipe and you'll love it too! Okay... not great rhyming, but this drink is seriously so refreshing in the Summer months! I love the vibrant colours. Lemons are a rich source of so many vitamins, most notably vitamin C which is fantastic for the immune system. Pair this with mint leaves, which are known for aiding digestion, and you have yourself a good, delicious and super simple drink to sip away on!

Ingredients

  • 1 litre water (sparkling or still)
  • 3 lemons 
  • 1 piece of fresh ginger, approximately the size of your thumb 
  • 1 Tbsp stevia
  • 6 fresh mint leaves
  • 2 cups of ice   

How to

  • Slice one lemon thinly and squeeze the juice from the remaining 2 lemons
  • Put both the lemon slices and the lemon juice into a large jug 
  • Grate the ginger and add to the jug 
  • ​Add the stevia and mix until the stevia has dissolved​
  • Pour in the water and add the ice and mint 
  • Stir and serve
