Smoked Fish & Prawn Pie with Sweet Potato Orange Zest Mash


You will not regret making this - this dish is a family favourite and something regularly requested! It might sound odd to add orange zesty flavours to your sweet potato, but it really is a winning combination. When you put the peas and prawns in frozen, they come out perfectly cooked when it's finished AND you have saved time by not having to pre-cook them at all. This dish is best shared with a bunch of friends or the family so you can easily exercise self-restraint by not eating too much! It would however, make a beautiful lunch re-heated the next day!

Ingredients

Serves: 4 - 6
  • 500g smoked fish
  • 200g frozen prawns
  • 1 cup frozen peas
  • 1 medium white onion
  • 2 large sweet potato (also known as a kumera)​​
  • ​1 Tbsp olive oil
  • Zest from 1 large orange
  • Juice from 1 large orange
  • 50g butter
  • 50g grated cheese (not processed)
  • 3 cloves garlic
  • 2 tsp miso paste
  • ​1 cup water
  • 1 tsp cornflour
  • 1 Tbsp water 
  • Salt and pepper to taste

How to

A little preparation to start:
  • Heat the oven to 200°C fan bake
  • Dice the onion and garlic (make sure you crush the garlic first to release the flavour)
  • Peel the sweet potatoes (kumera) and cut into similar-sized pieces (about 3 x 3 inch cubes)
  • Zest the orange if you haven't already!

Let's get the pie topping sorted:
  • Place the sweet potatoes as well as the orange zest into a large saucepan
  • Cover with water and put on a high heat to bring to a boil
  • ​Now would be a good time to juice the orange! :-)
  • Boil the sweet potatoes until cooked (should be tender and splitting when you insert a fork) 
  • Drain and let it sit for a couple minutes  
  • Add butter, orange juice and 1 tsp salt 
  • Mash together then set aside

Now for the filling:
  • Using the same large pan, sauté the onions and garlic until the onions are transparent 
  • Add the miso paste and the smoked fish
  • Mix together trying not to break up the fish too much
  • Now add the cup of water to make the sauce
  • In a cup mix the cornflour and Tbsp of water together using a spoon so that it becomes a paste, then add to the pot and mix together (to thicken the sauce)
  • Add salt and pepper to taste (not too much salt as there is salt in the miso)
  • Mix in the frozen peas and frozen prawns and roughly combine
  • Pour the whole mix into a pie dish (don't worry the peas and prawns will be cooked perfectly when you finish the pie in the oven)

It's all coming together now:
  • With a big spoon, carefully spoon the potato mash over the mix, covering completely
  • Sprinkle the grated cheese on top
  • Bake in the oven  for 15-20 min or until the cheese is melted and starting to brown 
  • Let it sit once you have taken it out of the oven for 5 - 10 minutes  
  • Serve with a nice leafy green salad or just on its own 😉
