Lemon Chilli Hummus


This is such a great snack! Pair your hummus with carrot, cucumber and red capsicum sticks (just slice them as you like) and maybe a thin wholemeal cracker or two 😏 This hummus recipe is based off my falafel recipe, so it may look familiar if you've make that recipe 😊 Although it has a whole chilli - don't worry - it's not over powering at all as it combines nicely with the lemon and chickpeas. So even if you don't like spice you'll enjoy this hummus mix!

Ingredients

Serves: 4 - 6
  • 1 can (400g) drained chickpeas
  • 1 small shallot
  • 1 mild chilli
  • 3 cloves garlic
  • Small handful of parsley
  • 1 tsp cumin powder
  • ​2 Tbsp lemon juice​ (you can add more at the end if you like the tangy taste)
  • 1/2 cup olive oil (mild flavoured)
  • ​Salt & pepper to taste​ ​​​

Special equipment needed:
  • Food Processor

How to

  • Peel the garlic and onion
  • ​Place all the ingredients in the food processor and mix on high until you get the desired texture - I like mine nice and smooth :-)
  • ​Serve with carrots, cucumber and capsicum "sticks"
