Fish & Kelp Noodle Soup
This dish has a bit of everything; spice, sweetness, protein and light carbohydrates! This dish can also be made of course without the fish, making it a great vegetarian option! The fish does though add beautiful textures. I came across the kelp noodles in the "international aisle" at the supermarket. After reading the label on the back (of course) I was pleasantly surprised to see that they were nearly zero carbohydrate - PERFECT FOR ME! And they are delicious, also adding another tasty texture to the dish.
