Avocado Omelette


There are so many variations with the omelette! I love the taste of a beautifully ripe avocado with cooked tomato in my omelette. Avocado is what's known as a "good fat", meaning they are fairly high in fat, but it's monounsaturated fat which helps to lower the bad cholesterol in our bodies. Good fats vs. bad fats though is a whole other subject!

​Nevertheless, with only a few slices you're enjoying its benefits in moderation! With the left over avocado simply squeeze some lemon juice or apple cider vinegar before storing it in the fridge to keep it from going brown.

Ingredients

Serves: 1
  • 2 medium eggs
  • 4 thin slices of tomato
  • 3 slices avocado
  • A pinch of salt and pepper
  • 1 Tbsp olive oil
  • Recommended for full delicious-ness: 1 Tbsp of my BBQ sauce

How to

  • Heat a medium-sized non-stick frying pan to a medium - hot  heat
  • Crack the eggs into a bowl or even a cup is fine too and whisk / mix with a fork
  • Pour the olive oil into the pan, move and tilt the pan around so the oil covers the bottom of the pan
  • Pour the eggs into the pan, move and tilt the pan similar to what you did with the oil so that the egg mixture covers the bottom
  • Using your fork, pull back the more cooked egg mixture towards the middle of the pan from various sides and then tip the pan to cover the bottom with un-cooked eggs again
  • Place the tomato evenly over one half then flip the other half over on top of the tomato with a fish slice or a spatular when the egg is cooked just enough to be able to do so
  • Turn the pan down and place the avocado on top and cover with a saucepan lid
  • Cook for another minute or so until the egg is cooked
  • With the spatula remove the omelette or slide it onto a plate
  • Garnish with salt and pepper along with the BBQ sauce

Note: This all happens pretty quick but after a couple of goes at it you will get the timing right... It's really important to remember it’s still going to taste yummy and have the same health benefits even if sometimes it doesn't come out looking right :-)
