Almond Oat Cookies


These make such a great small snack and would be an ideal treat in a kids (or an adults) lunchbox! I love the chunky bits of almond so when I am chopping the almonds I really do them quite rough, leaving some noticeably bigger chunks in the mix. These are healthier, more diabetic-friendly cookies but always remember portion control and enjoy them as a treat! Try pairing with a nice cup of tea too, yum!

Ingredients

  • 1 cup wholemeal flour
  • 1 cup wholemeal rolled oats 
  • 1 cup dry almond meal 
  • 1 cup roasted roughly chopped almonds 
  • 1/2 cup stevia
  • 1 tsp baking soda 
  • 1 Tbsp almond essence 
  • 150g butter 
  • 3 Tbsp boiling water

How to

  • Turn the oven onto 180°C fan bake
  • In a small saucepan, on a medium heat, melt the butter
  • Add the stevia, almond essence, baking soda and hot water
  • Mix together and take off the heat
  • Place the rest of the ingredients into a large mixing bowl and combine
  • Pour the liquid ingredients over the dry mix and combine together
  • Roll the mix into golfball-sized balls and place on an oven tray (I put down grease poof / baking paper first)
  • Flatten the balls slightly using a fork
  • Place the tray in the middle of the oven and bake for 25 minutes until golden brown
  • Once the cookies look a nice golden brown, remove from the oven and place the cookies on a wire rack for 30 minutes to cool before eating
  • Store in an airtight container
