Sweet & Soy Chicken Stir-fry


This is a fantastic dinner! It's not only super quick and super easy, it's also super nutritious... And SUPER DELICIOUS. Its basically a super-dinner is what I am trying to say! It's high in fibre and with the protein from the chicken l always feel full and satisfied afterwards. Traditionally you would use honey in the sauce to create that yummy sweet flavour... But here, using the stevia instead gives the same effect with flavour without affecting my sugar levels. I can bring this dish together in about 20 minutes, so enjoy mixing these beautiful bright coloured vegetables together and hopefully it will become a regular for you!

Ingredients

Serves: 2
  • 2 chicken breasts
  • 1 large red capsicum 
  • 150g green beans
  • 10 or so button mushrooms 
  • 1/2 medium sized carrot 
  • ​2 spring onions 
  • ​1/2 cup broccoli 
  • 2 shallots 
  • 3 cloves garlic​
  • ​3 Tbsp wholegrain mustard
  • 1 1/2 Tbsp soy sauce
  • 1 tsp stevia
  • 4 Tbsp sesame oil
  • 3 Tbsp canola oil
  • 1/2 cup boiling water
  • 2 slices of lemon 

How to

Get those vegetables ready to go:
  • Capsicum, green beans, carrot and shallots - sliced lengthwise (remember to de-seed and cut ends off capsicum/green beans)
  • Mushrooms - sliced in half
  • Spring onions - sliced into approx. 1 cm pieces
  • Broccoli - roughly chopped
  • Garlic​ - sliced thinly

Get those veggies cooking!
  • Put all of the vegetables into a wok or saucepan on a medium heat
  • Add 2 Tbsp sesame oil and mix this through the vegetables
  • Cook for 3 - 4 minutes, stirring so the vegetables don't burn. 

While the vegetables are cooking:
  • Bring another pan to a medium heat, and add the canola and remaining sesame oil (2 Tbsp).
  • Cut the chicken to bit-sized pieces
  • Add the chicken to the pan and cook until brown on both sides and cooked through

Back to the veggies!
  • ​Add half a cup of boiling water to the vegetables and stir
  • Place a lid on, so the vegetables steam :-)

​Back to the chicken now...
  • Add soy sauce, mustard and stevia, stir and coat the chicken with this mix
  • ​Add the chicken to the cooked vegetables wok and combine
  • add a slice of lemon to the side 
  • ​Serve, eat & enjoy! ​
